Example use of multiple slots: Character 1 has very high Per/Wil - Combat spec - trains combat skills faster Character 2 has very high Int/Mem - Science spec - trains science skills faster
Other uses include having additional lab slots and market orders.

No. It does not take twice as long. If it takes a combat spec 42 days to train a trade skill and it takes a trader spec 27 days to train the same skill, you earn 15 days by using the trader char instead of the combat char.
Of course, this is once you get past the learning skills, which are really short.

You can stop the current skill and train other skills you want. If you have to wait 3 months for ... wait there isn't any mining skill that normally takes 3 months to advance a level. Not even Titan skills take 3 months to go from IV to V.
Suppose you got bored for not shooting something while you are training a long miner skill, you can always switch to those 10 minute - 1 day skills to level your combat skills up, have some fun, and switch back to the miner skill.
If you want to train characters skills simultaneously, you need to get another account. The one skill training per account restriction has been justified. Summary: Exploit, character value, player interaction, and CCP.

It's not wasted. You might be using them later. Although I am mainly combat oriented, I have decent science skills too. Although I won't be using them for shooting stuff, I will be using them to research BPOs, for jump clones, for implants, and maybe for R&D/invention, codebreaking, etc.
There are also three other race ships you can try.
EVE is not a race against time.
