I'm ashamed to admit that after 3+ years in the game, I still have no clue as to what these are and what they do.
Descriptions are as vague as a vague things, EVEMon says "Sentry Drone", even the EVE-O Item database says "Sentry Drone" with no real further info. The only info I can see is they don't move.
So what do they do, shoot back at anything shooting you? I figure you can select the target they shoot at, but is that it?
Since they can't move I figure it's really important to make sure that the ship you're in doesn't move either otherwise you'll have to go back to the drones to retrieve them?
If anyone can enlighten my confuzzled mind then I'd be grateful.

*edit* Also they work like regular drones, except they don't move...at all, can be buffed via ship/modes to hit ranges in excess of 100km "except for gardes maybe"

they are drones, they behave exactly the same as other drones, except they have much longer range.
they can move slowly(like 1m/s slow), so i you are 1km out side of range they will eventually get there but yeah basically don't move while they are out, or at least get used to going back to get them.
p. close in DPS to heavy drones (i think its something like t1 sentry < t1 heavy < t2 sentry < t2 heavy but its p. close in all cases)
except they have no travel time.

they dont move and they have huge optimal... well actually they move... like 2 m/s :) other than that, they do everything same as other combat drones..
advantage over heavies, damage instantly applied... disadvantage, you either cant move or have to go scoop them... |

They hare high damage stationary (for the most part) drones. They are used similar to large turret guns in that they can be used to pick off long range stuff closing fast (No tracking) or orbiting battleships. They are "ranged" based on the damage they do. They are on par with Heavy drones in terms of DPS. You get the damage without the flight time. They can be buffed with damage rigs and Omnidirectional tracking links. Grade II's like Ogre II's are the highest DPS, but have the shortest range, but that can be extended out to over 45km with the mods.
They are the bread and butter of the Domi and Ishtar, show up in things like the Geddon and Mega, also used for Bash bashing though you have to keep an eye on them since they take damage fairly easily.

They are also nice as training just one skill (sentry drone interfacing) to V gets you ALL flavours of T2 sentries.

Trust me, you're not the first person in this place. But good on you to ask.

Essentially they don't; they apply damage at range instead. They act more like turrets, shooting anything you delegate them to shoot.
Unlike other drones, optimal, falloff, and tracking are actually important. Garde IIs absolutely pound things up close. Wardens can snipe extremely well.
Oh, and for once Amarr drones aren't that bad; Curators do respectable damage at a respectable range.
There are two items that help boost sentries: Omnidirectional Tracking Links (mid-slot; increases range and tracking) and Sentry Damage Augmentors (rig; increases damage). Neither is really needed, but on a dedicated sentry boat they can do amazing things.

The not moving thing can be a pain compared to other drones. But they're seriously worth the sacrifice in the right situation.

For PvP they are great in larger fleets since they don't need to travel to primary to actually apply damage, before it's already gone. And POS bashing aswell.
