To start off with i am just doing quests to try and keep things simple lol is this ok? How do i know when its time to go to lvl 2 quests? Once i start on the lvl 2 quests do i upgrade my ship to something else? (right now have a griffin)

this is eve, if thats what you want to do, then thats up to you, personally id get a bit bored of mission running, but its not a bad way to learn the game.

when you can afford to lose a ship and think you have a good handle on level 1 missions. basically if you can fly a cruiser and fit it with tech 1 modules of the correct (medium) size, you should be able to handle all level 2 missions.

aim for a caracal for level 2 missions, should handle them with ease.

Yeah, you say 'quests' and people will shout.
And congrats on leaving the playpen that is WoW.
Doing level 1 quests will raise your standings with the agents corporation. What that means is that if you are running missions for a level 1 agent from the Caldari Navy Logistic Support, your reputation with Caldari Navy Logistic Support will go up. Once it reaches a certain point, a level 2 agent will become available to you. You can check what agents are available to you and where they are by clicking on the corporation information tab. You can also check that corporations standings towards you this way.
If there is an agent who is not available to you, clicking on that agents info will tell you what standing you need to access him or her.
As far as level 2's go, you'll need to upgrade to a cruiser. The way it works is frigs for level 1's, cruisers for level 2's, battlecruisers for level 3's and battleships for level 4's. Bear in mind that your support skills need to be up to scratch to achieve success in higher level missions.
And also, the guide that was linked is a bit out of date!
