Can't decide which race to go with. I like the way Caldari Bustard and Crane look, but they have limited low slots for expanders or i-stab/warpstabs for running low sec gate camps.
Amarr seam better but if I ever decide to tank the rats at a mining op in 0.0 caldari is clearly better due to shield reping bonus.
Any suggestions?

The race of transports you would use should also be dependent on which racial industrial you want at 5.

Also.. why is a hauler tanking in a mining op? If you leave grid, the rats will switch targets?

I have an alt that can fly a Fenrir already. I want to try something different this time.
I use this alt for low sec traffic. To fuel and supply my jump drive ship(s). I guess amarr will probably suit me better.

I prefer the Impel. With 7 lowslots and expanded cargoholds II you will get already an impressive extended cargobay. If you decide to install 2 cargorigs in the rigslots you have up to 35.000 M¦ cargospace. With 11 or 12 giant secure containers you will have a total capacity of 46.000 M¦

I'm currently training for Mastodon, with the nice shield resists and amount of lows it can get a nice shield buffer going while still carrying a nice amount of cargo. I am already trained for the ocattor but realised that the combination of armor tank with hauler doesn't work so well, at least if you're not amarr . Bonus for mastodon training is the Prowler, 4000m¦ cargo with excellent agility. Though viator is very nice as is.

So, if he's got to tank an Atron, with Civilian Blasters he's already lost it? If you're going to be vague, we're gonna quickly find the holes in your weak arguement. Provide a constructive criticism, or provide an exit stage left
Now back to the point:
You shouldn't be tanking in your hauler. Just warp to a safe spot, aligned and ready to move should you get scanned out, then each time you're needed, just warp in, warp out again and align. AFK hauling isn't smart and if you're running gate camps, the best ship you can use is a fast ship, but if you're not running a very hot zone, the largest cargo capacity is by far the better choice. Always hard answering a question like this as there is no iWIN button, so your answer is:
It depends. How hot your route is, how heavy your rats are, and your ratio of cargo vs speed.
Many risky runs is better than one risky one, so personally, I would go with Minmatar. But everyone and his dog loves the shape of the Iteron V

Not necessarily. Smartbomb gate camps aren't all that rare, so being able to survive at least that is good. In addition, when doing lowsec hauling a large HP buffer can be the difference between life and death. Sure, it won't save you from a large or good gate camps -- but many, many lowsec gate camps are neither. Sometimes you can MWD back to gate and tank the damage.
I love my Viator and Occator. Viator is damn near impossible to catch, and Occator I use for lowsec POS fuel hauling -- it has a big passive tank, lots of cargo space, and won't automatically die to a solo pirate.
So... passive tanks on haulers can save you. Active tanking is, of course, generally a waste of time.

occator and viator, i second this... they can fit in buffer to med slots, cause lows are for extenders or speed mods.
don't think that caldari are a good option, but you do get the biggest freighter.
i've seen many more iterons these days than say impels or mastadons, badgers are very numerous too

Well... Occator can fit an LSE II + invufield in mids, and with the Transports skill at 4 it also has decent amounts of armo without any lowslots used (remember that the skill now adds to the armor amount). Add in a DCU II, and you're looking at not-bad ehp values (for an indy, at least). The smallish sig and high resists help, too.

Istabbed viator and crane are pretty much equal, crane winning cargo space. Expanded viator gets a bit more cargo space. With cov-ops cloak, you don't need max agility anymore.
Charon has lots of space and it looks sexy. Gallente, minnie freighters are... ugly.
Itty V is nice but amarr and caldari transports are equally useful, albeit more expensive.
Go amarr or caldari.
