Other MMO have day time that changes as you play but eve does not.

The option is in your settings. Hit the ESC key and tick "the sun is occluded" Good luck.

Starships are like real world nuclear subs, there is no day and night just the time you goto sleep and the time you wake up. now you might still hold onto terms like calling 19:00 night though.

primary plot lines of Halo and Planetside take place on the surface of spacial body and as such they have a night side and a day side. in outer space you wouldnt have this. "night" is just a perception of time anyway, in Northern Alaska they have a time of year where it is never fully dark but they still call it night and day afaik.
add to this a ship is a 24hr operation, the 24:00 shift is likely still called the night shift.

I just noticed it when I came from other MMO I was playin earlyer on my orc am still getting into eve but I do miss the day times.

So to summarise EVE is a dark game played by dark people. I don't think that people like you will be able to put up with this problem for very long. So when you quit contract all your stuff to me

There's no day or night in space, there are only stars!!!
Day or night happens only on planets. If you fly out in space, the sun is right there, you can look at it, it's always up.
Those other MMO's you've played, you had an avatar that ran around on the surface of a planet. EVE is in space, you're not on a planet. So there's no day/night. There's no weather. There aren't any seasons. There's no horizon.

Select 'Sun is occluded by ship' from the Esc menu. Fly up to a planet and position yourself on the opposite side to the Sun.

I'm going to go out on a limb here and assume the OP is wondering why New Eden Standard Time does not adjust it's time like so many other countries do, forcing him to adjust his internal Local Time to NEST conversion constant.
It's because Icelandic people have to remember to adjust their GMT -> <Insert whacky country that likes to fiddle with their base-point for time measurement a couple of times a year> conversion constant. Vengeance is sweet.
