I played for a few months last year and then quit but now I'm back and I view the game completely differently and can see myself playing in the long term. I have a Gallente character with close to 3m SP but they're a real mixture of learning, combat & industrial skills and mainly what I've done with him is lvl 1 missions and some mining. I really like the look of the Gallente & Amarr ships. I know from previous MMO experience that it's important to go with a look you like because you'll be staring at these ships for a long time. I also know that any race can fly any ship if you're willing to put the training in but I'd rather choose which race's ships I'm gonna have my combat guy use from the beginning so that I don't have to cross-train.
SoàGallente or Amarr for my combat pilot? And if Amarr should I roll an Amarr or start training my Gallente guy to fly Amarr ships? I really like the sound of Amarr ships being fast(ish), tough and using lasers. I'm thinking this may suite me more than the drone/cannon-boats of the Gallente. What are Amarr ships like for a beginner to do missions in? Any other advice anyone can give me to help me decide between these two? I guess I could possibly be persuaded to go Caldari if it's highly recommended for doing missions in. Sounds like it would be nice to fire missiles from extremely high range and kill my target before they have a chance to do anything - if that's what it's like. Just looking for some advice from people who've played different races' ships.

Gallante tend to hit harder. I have an Amarr main char and Gallante alt. I use both for combat. Gallante work really well with drones. Amarr can armor tank. But with Amarr, I find that keeping my cap up is a bit of a struggle. And yes, sometimes I have to sacrifice looks of a ship in order to achieve what I need to.

If you like the idea of missles hitting from a long distance, then don't discount the idea of drones just yet. When I'm flying my Arbitrator I have my drones engage their target from 45km out. At that range I don't get hit all that often when ratting or doing missions.
I've also found that a drone boat is fairly nice for salvaging as your high slots are available for tractors/salvagers.

If you like fast ships, then try Minmatar. Minmatar have the fastest ships, use very little cap for their weapons and have the plus side (or downside, depending how you look at it) that after you train all the skills necessary to make a good Minmatar pilot, you can easely train any other racial ship.

I'd go with Gallente as the ships are frankly better than the Amarr ones (overall, the Amarr have some great ships, as does any faction). It really just depends on what you are looking to do and which style suits you the best. Each faction has advantages and disadvantages. Keep in mind that if you make an Amarr pilot, you still can train the other factions ship skills. I learned Caldari Frig, Cruiser, and Battleship on my Amarr pilot because I liked the Drake and Raven so much.
If you are set on using lasers, definately go the Amarr route though. Their ships recieve the laser bonuses.
