I have a home network running on an 8mb + connection to the net, and I'm wanting to sign my son up with his own account so he can train his own characters without interfering with my account. Is this appropriate since there will be multiple computers?

Yeah, the average playerbase in EVE has 2 or more accounts, actually. You're even allowed to run them on the same computer, provided it's powerful enough that it doesn't choke on two EVE clients both in windowed mode.
The My Account part of this website (check the menu to the left) will let you transfer characters (for a fee), so that if your son already has a character, he can continue with it, and not have to start from scratch.

You can run as many accounts off of one computer/network as you like. The only thing you aren't allowed to do with them is share their details with people or break the EULA in other ways, such as macroing them, or using them to farm and sell ISK for real life money.

We should point out that you can't run several clients on one computer if one of them is on a trial account. They all have to be on full accounts to do that.
This does not apply to several clients on a network. Since the check is done on the computer, not the server.

The least of anyone's connection problems is the number of accounts they have on a broadband connection. So you shouldn't have any trouble.
