If a ship has locked onto you, and you activate a Sensor Dampener and it puts you outside of the range of the target ships new tracking range, does the lock he have on your break?
If yes, if that ship has missiles in the air toward you, do those lose their tracking, or do they track separately from the ship?

His lock will break if his targeting range can no longer cover you. He'll also have a much harder time to lock onto you again (reduced sensor resolution).
Missiles and/or drones will still hit as long as he is on the grid and hasn't engaged warp drive or cloaking device.

I believe his missiles don't hit you because they needs a lock. If they are fof missiles they would though, but that's not what you asked.

Well, tbh continuity wise missiles don't need the entity they're firing from to maintain a lock (not always).
In the case of EVE, if your lock breaks then missiles still hit as long as no warp drive or cloak (I THINK THIS HAS BEEN CHANGED BTW, CLOAK I MEAN) has been activated.

The missiles will not hit. they require the guidance of the parent vessel.

Except for the F.o.F. missiles. They do not require active lock and will automatically home on any aggressing vessel in range. Though targets are chosen pretty much randomly.
