How many types of ammo do you actually carry with you? am more interested in missiles at the moment. Also how/what is te quickest way to identify what type of damage an enemy is weakest against.
for example i was attempting to kill some rats and my missiles were doing minimal damage, been a casual / noob player it took me ages to realise i was using the wrong type of missile lol.
so at the moment i am running round with 2 types of missiles in my cargo, is this right or wrong way to go about things |

The ammo I carry with me is often based on what I expect to encounter. When doing missions, the mission journal will tell you which faction you are facing, allowing you to bring the ammo you believe will deal the most damage. There are websites, such as OGRank, which will tell you what damage types to deal (and defend against).
As long as you focus on PVE (Player vs Enviroment), 2 ammo types should be fine.
PVP (Player vs Player) I find to be much more difficult, when trying to determine the correct ammo to use. Missiles can deal all damage types, and which to choose can be a decisive factor to the outcome of the fight.
Personally, the few times I bring a missile boat to PVP, it always carries kinetic missiles, as the particular ship type gives a bonus to this. Bringing a few alternatives is always a good idea. If you've got the room for it, don't be afraid of bringing all damage types, as well as some tech 2 variants.

For rats, there are simple reference charts (googling 'eve rat damage types' will find them) and you'll memorize them eventually. //edit: ISD Etetia answered this part very well with a nice link
For actual ships, it's a combination of your knowledge of resist bonuses/holes and guessing from various cues you get (such as speed, seeing a hardener effect, the amount of buffer etc). This is especially important in the case of T2 ships because of their greatly varying resist profile. I can attempt to describe this further if needed.
I also know some players who deliberately probe for a resist hole in PVP (e.g have groups of different damage type missiles loaded -> see which does the most damage during the first few volleys -> switch accordingly). For Caldari missiles are easy:
For a ship with a kinetic damage bonus (example: Kestrel, Caracal, Drake, Tengu): * EM for EM weak NPC (Sansha, Rogue Drones, Blood Raiders). * Kinetic for everything else.
For a ship without a damage bonus (example: Raven): * Whatever type the NPC are weak to.
My Tengu does enough damage (kinetic damage bonus) that I'm often lazy and just use kinetic all the time.

For level 1-3 missions I use kinetic only. For level 4 missions I have 5 ammo types in cargo (EM,Thermal,Kinetic,Explosive,FoF Kinetic) because it's faster to have all on board than to switch what I carry based on mission. |

PvP blaster ships: Faction antimatter and Null PvP autocannon ships: Faction EMP, Faction Fusion, Faction Phased Plasma, and Barrage PvE Sentry Domi: Antimatter L and Iridium L PvE Ishtar: Antimatter M and Iron M |
