Yeah... this has nothing to do with using a pendulum clock, carved with a stone hand axe out of a sea sponge, trying to function on a rocking roiling ship. There must have been a time vortex involved somewhere.
Most of the ideas posted in this thread are just space junk will get removed from the overview and ignored by the players. In fact, most of space is only used for target selection and tactical navigation, and all travel and other interactions with the game being done on the overview and other interface windows.
The question needs to be broken into 2 parts. on-grid space, and in-system space.
On-grid space can be filled up with space junk, maybe making some of it actually useful. I'm afraid most of it will be ignored, just like billboards. I remember when there was a billboard glitch (maybe just on sisi) that made the billboards take up your whole screen. I kinda liked that, and that would be cool if they had some interesting content.
In-system space would need some world shaping to fill up. It would be really cool if world shaping was changed to be dynamic instead of being static and needing a downtime. I'm talking orbiting planets, rogue planets, celestial events, and the other stuff mentioned. In the fluff, all systems suitable for a jumpgate are supposed to be binary stars. Why isn't that rendered in space? But yes, this stuff would be cool, but still get ignored.
If there aren't more places in a system to go, and things worth doing once you get there, space will always feel empty. Look at the numbers of unused stations, and the hidden space junk.
A note on system-wide asteroid belts: yes the idea is realistic, but most of the ideas suggested for it would make for awful gameplay. Part of the point of a belt is having a specific place to go and something specific to do there, including interacting with other players. An update of the asteroid belt system would be a good opportunity to nerf bots and the old nonsensical belt system, but it needs to be updated in a way that still provokes player interaction. Maybe there should be NPC survey teams directing pod pilots to the minable hotspots, that when mined out respawn somewhere else in the system.

System wide belts can be broken down into sectors, Like Belt 1 sector 2 bring you to the 36-72 degree on eliptical section of the belt. Then installing NPC miniging stations you can quickly warp to sections within that sector.
I do agree most of these objects would probably never and shouldnt appear on normal overview selections but the fact they are there in the envrionment might make things a bit more interesting to look at least.
Still some have oppertunties to be fun mini activies to pass the time while you wait for fleet opsm for more greifing and pampering options.

Excuse me if this has been mentioned already, but i'd like to see some dark systems, I mean very dark, with a dim sun, and black sea that you can't see the end of. So far the darkest constellation I have passed through is in Verge Vendor, I want to feel like I am in deep space!

Set a limit to free hanger space, have traders forced to spread out, lets not have one station hubs. Better yet have stations have fewer services a max of three. sure you'll have to move around but heck it will force out the neckbeards to exit the stations. Space whales lol.

There are a lot of things we miss in the Universe just to improve immersion, but there are a few that would be needed for real gameplay.
A rich landscape of population on planets. (for PI)
In the original vision PI would have included population control, so we need people on planets to let it happen. Population on planets should be split into cities, and in every city population could be described by a density function of many variables:
- Age
Pretty self explanatory. Different aged people have different needs, to make them happy you'll need to import different things on your planet.
- Morale
If people are in a bad mood, their productivity will be lower and there may even be civil unrest. Morale is influenced by several factors.
- Education
Strongly correlated with age, education is what current high tech industry needs. You will need highly educated people to run high tech factories or a good quality entertainment industry.
- Self awareness
The group with higher self awareness will be harder to exploit but its mood will get better if they get a good treat. It is positively correlated with age and education, but sometimes uneducated people can be really aware of their rights, expecially when there is civil unrest.
People in every city in New Eden could be divided into 3 different age ranges, 3 morale ranges, 5 education ranges, 3 ranges of self awareness and 4 races, for a grand total of (3x3x5x3x4) 540 different groups of population, some groups will be larger, some other will have a smaller number of people (number can change with immigration, deaths or births). Every group will need different kind of things to be produced on planet or to be imported, and players will be able to hire (or enslave) the people they need in their planetary industry, giving them a wage (or not). People will change morale over time, and will try to move (if you allow them) to a place where the morale of the people with their education is higher, or they could try to rebel. To discourage rebellions and reduce the effectiveness of "those damn commies" you can hire more policemen.
Small sized semi hidden installations. (for small gang warfare)
NPCs factions own those small outposts and installations we see on missions and in complexes. Players should be able to own their ones, and run factories in them. Why? Currently, the smallest thing you can own in space is a POS. In order to defend or attack a POS you need a fleet, or even a capital gang. To revitalize small gang warfare, we need smaller player owned objectives, whose safety does not lie on a passive "I have 500m EHPS" but on visibility (bound to chance), on limited set up costs, and on careful positioning/activity to reduce the possibilities that it is discovered by hostiles.

Actual Binary systems with kuiper belt objects at over 1500au out and a scanning system to support it. KBOs: Planets, Dwarf Planets, Comets, Asteroid Belts, and etc.
The volume of navigatable spaces needs to be greatly increased in all systems. Give a reason for scouts to show how their high warp speeds actually mean something apart from just once in a while.

A planet being nuked from orbit.
A massive Zero-Gee raceway/sports complex above a populated planet: audience stands, vendors, transports, security ships.... Quidditch in space?

*Edit* While I'm thinking about it, not every planet everywhere is perfectly round. What if some planets looked like they were hit or had like a huge chunk blown out of it so that you could see it's core. All the planets in EVE look about the same. They're round, have one of 9 surfaces, and have moons. The temperate planets don't even have an ice cap. Oh add comets. I haven't ever seen a comet flying through space with it's tail facing away from the sun

No, actually it's part of the game lore, the stargates only work in binary systems because they have to be at a point where the gravity for both stars cancels each other out or something.

Comets and/or Planetary rings - Harvestable fields of "dirty ice" mixes that contain a combination of ices and rocks. Harvesting could either provide a mix of ice and rocks(at reduced amounts of either pure ice or rock mining) that vary in types by security level of the system. For example, one type of high sec could yield 25% (insert basic ice here), 50% veldspar, 25% scondite. Another option would be to simply harvest "Basic Dirty Ice" for example and then process it into the assorted ice products as well as some veldspar and scordite. You could easily have more skills to train for harvesting and processing, refining would be a factor, etc.
