Basically you go so fast that the guns can't track you and the missiles can't catch up with you so you don't receive any damage. .

Although note that turning on a MWD vastly increases your signature radius. This doesn't matter if your opponent's scan resolution is already smaller than your signature radius even without the MWD, but can make quite a huge difference if the opponent's scan resolution is a lot larger than your signature radius.
Interceptors get a bonus reduction to the signature radius increase caused by MWDs.
Also note that only "angular velocity" matters. In other words, it's like a shooting gallery at a carnival: The ducks have to move ACROSS your field of vision so that they're harder to hit. A frigate that turns on its MWD and flies directly toward a battleship will suddenly become a much larger, and technically stationary target (from the battleship's perspective) that will soon be obliterated.
Or, you know, some junk like that.

It's best to orbit into a target or away from an enemy.
Also MWD don't work in PvE missions. They get disrupted by some cosmic interference. Best to use high Meta afterburners and speed boosting rigs.

True for turrets. Not so true for mitigating missile damage, where it's your speed not your angular velocity that's relevant.
Signature radius also affects damage from missiles: the bigger your sig, the more damage you'll take.

With an afterburner, my CNR does about 300 m/s. In a level 4 mission, this is enough to both reduce damage considerably, and allow me to stay out of NPC range (kite). I often turn my shield hardeners off during a mission, as nothing is hitting me.
I typically orbit something at 105 km until the crowd thins, then head for the gate, so that I pop the last NPC as I reach the gate.
Keep in mind this is not very fast and a big battleship, yet it still makes a noticeable difference.
