Every freighter should have different attributes depending on race (i know they are some differences now but not very much): Amarr Freighter (Providence)- Thick armor with resistances, 200k and more, medium cargohold, slow - good for low sec - nullsec hauling operations
Caldari (Charon) - Largest cargohold, but slow and least agille - Good for hisec and large volume hauling
Gallente (Obelisk) - ballanced attributes- balanced
Minmatar (Fernir) - smallest cargohold, light, thin hull (50k and less), fast and most agille (align time 25s or less), 1,4 AU/s - good for "fast" traders/haulers, but good "bait" for suicide gank...

It would be nice to see a little more variation in the four almost identicle ships however its hard to make a certain ship fit a certain role with out drastically modifying its attributes to do so.
I dont think changes as subtle as the ones you have suggested would encourage much alternating use off the 4 freighters instead it would probaly just make the charon the most popular freighter by far because it would be the only one that still fits the conventional role of a freighter.

Actually gall one would be the only one used to haul in hisec (immune to suicide ganking) and would cause all prices to go up noticeably

I think there should be more variation in the Freighter line. We do have T2 Jump Freighters which are great for low/null sec but there is alot more that can be done.
How about Freighter class rigs. These would allow the roles to be tweaked to fit in with what the players want.
Some rigs would allow for an increase in cargo capacity but limit what can be put into the hold. Eg an ore rig would allow a doubling of the cargo hold capacity but limit the payer to only put ore in there and nothing else and also slow the ship down. Another could turn the hold into a ship hangar so it can transport alot of rigged ships. Others could improve the alignment time and accelleration but at the cost of cargo space or shields and armor. There are lots of possibilites but it would be important to ensure that any positive change would also have a significant drawback in other areas. There would be no problem with running round in a general purpose unrigged freighter but also be able to tune it to your playstyle more if you wanted to.
The rigs should be expensive enough that people would have to think carefully about changing the role of their freighter so should be aimed at around 50-100m each. This would make it cheap enough that you could do it if you wanted to.

This is the sexiest idea I've seen around these parts for a while. Taps upon the modular ship feature that T3 has, but with the "consider before you rig her" rule of expensive riggery!
Freighters aren't allowed to have holds over 999,999m3 (else they can haul capitals into highsec) but this dodges that bullet with ease.

You'd have 3 slots as usual but with a minor change: The freighter has 0 calibration points. This is fixed with the bonus/malus rigs:
Bonus rigs: Cost calibration points Have a positive effect
Malus rigs: Provide calibration points Have a negative effect
Freighterfit: Highspeed!
Example: (Malus) Reserved Cargohold II: Decreases Cargocapacity by 20% Provides 200 Calibration points
Example: (Bonus) External Cargohold 1: Warp and alignspeed slowed by 10% Costs 100 Calibration points
Example: (Bonus) External Cargohold 1: Warp and alignspeed slowed by 10% Costs 100 Calibration points
By providing a set of malus and bonus rigs, it would be possible to tweak your Freighter to a specific role.
