I have been through many systems in EVE in my last year or so...
And it has dawned on me, that I have never come across a binary system.
Are there any at all? Or do all systems only have one star? Just wondering for my own curiosity...

No, none exist.
I'd love it if they overhauled the entire universe, and had everything from those to black holes and various dwarfs. Would be a good thing to do while removing the gate system altogether, and having people use on board systems to scan out systems and warp manually to them.

Yes they do. Form black hole systems to binary systems. Everything is already in EVE. The systems can be found in W-Space (Wormhole Space). Some of the W-Space systems have local spatial anomalies which include, but are not limited to binary systems and black hole systems.

I have never seen a system where you have two stars that you can warp to.

Well, i stand corrected. Although i was thinking on a much, much, larger scale. In reality we'd have to deal with them everywhere we go, or at least watch out for them. Things like supernovae going off would be a flight hazard for sure. The universe is a dangerous place. There's probably also black holes easily as large as the entire eve universe, so it would make sense they'd get in the way a bit more if we had any around.
