Hi!
I need help with Mackinaw fit, I have 2 Mackinaw pilots and IttyV as hauler, do I need to tank them? Or do I just put two T2 ice harvesters and upgrades? How about cargo rigs?
Or would I better off in hulk?

Mack would be better for ice mining.(2 miners with a 100% bonus are better than 3 miners) Or... to put it bluntly 4 > 3
High sec? Got Drones? You'll be fine. No real need for a tank.

I cant fit two harvesting upgrades, should I use cargo rigs and cargo expander?

If you can't fit 2 upgrades yet, just fit one for now. Since you have a hauler cargo expanders aren't going to be very useful, nor are cargo rigs so you can save money there.
I'd just run with one upgrade in the lows, until you've trained up electronics and mining upgrades and can fit a second one.
