it seems most of the planets are either gas giants frozen worlds or volcanic worlds... i have yet to see an earth like world in new eden. blue oceans and green / yellowish land masses |

I've wondered a bit whether the lack of Earth-like planets in Eve was a deliberate choice by CCP in order to emphasize the idea of a harsh, unforgiving region of space. A lot of the worlds, even the inhabited ones, seem extremely hostile to human life. Can't recall having seen any significant oceans, although I'll admit I haven't traveled through hundreds of systems yet.
The attributes of some of the inhabited planets sound downright oppressive to an Earth-born human. Caldari Prime, for example, has a gravity of 24.6 m/s¦, about two and half times higher than Earth's gravity of 9.8 m/s¦. The atmosphere is a choking 646.36 kPa, compared to Earth standard atmosphere of about 101 kPa at sea level. Makes me wonder if its residents are all musclebound, thick-boned dwarves with bellows for lungs. That, or everyone lives in a habitat domes or whatnot. |

There's some that look like Earth at night. You can see lights and stuff on them. You're right though, more Earthy-looking planets would be nice.

There are blue ocean worlds with visible land masses. They are rare (which I think is pretty accurate), so when you find one they kinda stick out. They're also very pretty most of the time. ~ Santiago Fahahrri Galactic Geographic |

This has always bothered me too. I've read in lore somewhere that Caldari prime was terraformed, but this couldn't really be the case since the gravity alone would make the world unhabitable to most organic life from earth (animals and humans would develop muscule and bone problems pretty much from birth, not to mention what would happen to a pregant woman if a 3.5 kg baby instead weighed 8.25 kg in her belly. Plantlife would have a harder time reaching towards the sky and would likely snake along the ground instead). In eviroments with high atmospheric density organic life would likely grow larger (studies indicate that earths atmospheric density was once higher which was why the dinosauers grew so large). You would have to live in buildings where both atmosphere and gravity would be strictly controlled and whilst atmosphere would be somewhat easy to regulate (we do this in submarines and airplanes), a machine to negate the effects of a planets gravitational pull, would probably have a pretty high constant power consumption.
Then again the planets inhabitants might have had their genes manipulated so as to adapt to Caldari Primes environment, but this would probably have changed their apperance somewhat (like weird looking dwarves like you mentioned). Even IF the caldari had been genetically engineered to live on Caldari prime in some way that DIDN'T cause any cosmetic changes, they would still have a hard time living in evironments adapted to people from other planets, which is going to be the case with walking in stations, where all races can apparently interacts in the same environment.
Eve seems to suffer from Star Wars/Star Trek syndrome where any lifeform can survive in any environment OR all planets are exactly like earth (except limited to one type of climate like desert planets, forest planets, city planets, candy planets and so on).
